Which value should I copy?

The shortname is the identifier used by many commands and configurations, for example wood or rifle.ak.
The Item ID is a signed integer: keep any minus sign and use the format your plugin expects.
Default stack sizes come from vanilla Rust. Plugins can change those limits on your server.
Icons come from the game; ten definitions have no supplied icon in this installation.
